QUALITY CHOCOLATE AND INGREDIENTS FROM AROUND THE GLOBE
I was born in 1981 in Italy, Liguria, the little strip of land squeezed between the sea, Piemonte and France. It is the region of pesto and poor ingredients but amazingly tasty and colourful dishes. The region was once dominated by the Arabs that brought us artichokes and chickpeas and gave us the chance to invent panissa (a chickpea and polenta dish that is sliced and fried). was born into a family where food matters more than anything else, my grandma cooked like a pro for up to 40 people.
It was never a chore for her and her homemade pasta was the best ever, I remember kneading the dough for the tagliatelle standing on a stool next to her, I tried to copy her movements and desired so much that silver knife she was using.
When I was 19 I joined the merchant navy and started working on cruise ships and ferries. This went on for about 8 years and I learnt a lot, but most importantly, I developed a mind blowing passion for food. I always think of my food as a silent way of saying that I care for someone.
After this,I was asked to become a chef on private yacht and worked for a shipyard’s owner for two years and totally loved it. Five years ago I decided that Scotland was going to be somewhere I wanted to call home and it truly is home, it's where I've finally realised my own dream to become self-employed and do what I love the most; care for people by cooking for them.
More recently, in the past 2 years, I've developed a passion for chocolate and I know spend half of my time creating handmade, artisanal bars, pralines, easter eggs, etc...
